I have a health freak in my house who was waiting for risk-free green salad due to recent outbreak. We had some bell peppers, onions and cucumber in our garden, she just put all together and came up with this salad.

I like gardening, due to weather in North East – it is possible for 4-5 summer months only. I always keep few packs of microwavable frozen packs of edamame in pods in my freezer. Whenever I need a healthy and filling snack, just microwave it. It is my guilt-free anytime snack! Now I know another wonderful use of this frozen edamame.

Filling Plant based Protein Crunch Salad

This salad is answer to all questions in one bowl – it has some green color, crunch, taste, and it is a lighter meal.

Ingredients

1 pack of frozen edamame
1 small cucumber
1 green onion or ¼ small red onion
1 tsp green hot sauce
½ green bell pepper
Salt, black pepper and lime to taste
1 tbs dry roasted peanuts

Method

  • Microwave edamame packet for 3 minutes, let it cool.
  • Shell the edamame and dry roast the edamame (optional – for added smoky flavor).
  • In a bowl, mix edamame with chopped onion, bell pepper, cucumber and green hot sauce.
  • Add salt, pepper and fresh lime juice – per your taste.
  • Add roasted peanuts – for added protein and crunch!
